1-BOWL Brown Butter Pumpkin Chocolate Chip Cookies
30 mins prepServes 6
One of my most loved fall recipes from last year! If you haven’t tried this recipe yet—you MUST 🍪 I made a couple tweaks to the recipe from last year so they’re back and better!
Preheat your oven to 350°F. Brown 6 tablespoons of melted butter and let it cool for 10 minutes. Add the browned butter to a mixing bowl, along with 1 egg yolk, 1/4 cup of cane sugar, 1/4 cup of coconut or brown sugar, 1 tablespoon of maple syrup, 1 teaspoon of vanilla, and 1/4 cup of pumpkin puree, then mix until smooth. Next, add 1 cup + 1 tablespoon of all-purpose flour, 1/4 teaspoon of cinnamon, 1/4 teaspoon baking soda, 1/4 teaspoon of baking powder, and 1/4 teaspoon of salt. Mix until a dough forms. Fold in 1/4 cup of dark chocolate chips. Chill the dough in the freezer for 10-15 minutes. Roll the dough into 2 tablespoon sized balls and place them on a parchment paper lined baking sheet. Bake for 10-12 minutes. Top with some flaky salt and enjoy!
