Crazy Feta Recipe

First, you’re going to roast 1 jalapeño and 5 cloves of garlic—wrap them in tinfoil with a drizzle of olive oil. Roast in the oven on 350 for 45 mins. After they’re done roasting, add 8 oz of feta, the roasted garlic, 2 tbsp of olive oil, juice of 1/2 a lemon, and a pinch of salt + pepper to a food processor. Blend until MOSTLY smooth—you still want it to be a little chunky. Add in 2 tbsp of chopped parsley, the roasted jalapeño (diced), and 2 more tbsp of olive oil and pulse until combined. Transfer to a serving bowl or airtight container if you’re keeping it in the fridge.
