A simple and delicious homemade dairy-free egg nog recipe made from 6 ingredients, perfect for the holidays. Enjoy on its own or use as a base for egg nog matcha, chai, or coffee.
1. Start by making homemade cashew milk (or use store-bought dairy-free milk). Add 1 cup of cashews to a bowl or container and pour in 1 cup of hot water. Let this soak for 10 minutes to help the cashews blend into a creamy milk.
2. Add the soaked cashews and water to a juicer or nut milk maker, along with another 1 & 1/2 cups of water. Alternatively, use a blender to blend all ingredients together until smooth, then strain if desired.
3. Pour the prepared 2 & 1/2 cups of cashew milk into a bottle or jar. Add 3 tablespoons of maple syrup, 1 teaspoon of vanilla bean paste (or extract), 1/2 teaspoon of cinnamon, 1/2 teaspoon of nutmeg, and 1/4 teaspoon of pink salt.
4. Shake the mixture vigorously to combine all ingredients thoroughly (or blend briefly in a blender).
5. Enjoy the egg nog on its own, or use it as a creamy base for chai, matcha, coffee, and other festive drinks.
