Make your own fresh and flavorful ginger beer from scratch with just five simple ingredients, sweetened with high-quality Busy Bee Honey. Perfect for festive holiday beverages or enjoying cold over ice.
Start by making the ginger honey simple syrup. In a saucepan over medium-high heat, combine the 1/2 cup water and fresh ginger (grated and chopped). Bring to a boil and then turn the heat to medium-low and let simmer for 5 minutes. Turn off the heat and let the ginger steep until warm (about 10 minutes).
Strain out the ginger using a fine mesh sieve into a large mixing bowl and mix in the 1 cup honey until fully combined. This is your ginger syrup.
To the ginger syrup, mix in the 1/4 teaspoon active dry yeast, 1/4 cup lemon juice, and 7 cups filtered water. Transfer to a large mason jar, seal, and gently shake to combine.
Store the bottle in a warm, dark place for 2–3 days to carbonate. Once carbonated, refrigerate to stop fermentation. Open carefully (it will be fizzy!) and serve cold over ice or mix into holiday mocktails!
