A simple 6-ingredient pita recipe, fried until crispy, making the perfect vehicle for all the dips (especially pickle tzatziki!). This recipe details how to make the pita from scratch and then transform them into crunchy pita chips.
In a large mixing bowl, whisk together the warm water, honey, and instant yeast. Whisk in the olive oil and greek yogurt until smooth. Mix in the flour and salt until a shaggy dough forms. Knead until smooth. Transfer the dough back to the mixing bowl and let it rise somewhere warm for about an hour, or until doubled in size.
Divide out the dough equally into 8 pieces and shape them into a ball. Using a rolling pin, roll them out until they’re about 6 inches wide and 1/2 cm thick. Place them on a large lined baking sheet to proof for 15 mins while you work on heating up the skillet.
Cook the pita dough in a skillet over medium heat until bubbling (about 3 mins). Flip and cook for an additional 3 minutes.
Once you’re done cooking all of the pita, slice them into triangles and fry in oil until golden brown and crispy. Sprinkle with flaky salt and serve fresh!
