My favorite way to make Caesar Salad
10 mins prepServes 2
This recipe for Caesar salad combines chopped romaine and arugula with lots of lemon, toasted breadcrumbs, fresh shaved Parmesan, and a sharp, flavorful olive oil for lots of crunch and tartness. It's a simple recipe that has evolved over time.
First, toast 1/4 cup of Italian breadcrumbs using a saucepan on low heat. Toss around every minute to avoid burning—this should take about 5 minutes to toast. Then, in a large mixing bowl, whisk together 1 tbsp of mayo, 2 tbsp of lemon juice, and 2 tbsp of olive oil until smooth. Mix in 3 tbsp of shredded Parmesan, 1 tsp of cracked pepper, 1/2 tsp garlic powder, and a pinch of salt. Add about 2 cups of finely shredded romaine and 1 cup of arugula to the bowl and toss. Serve and top with shaved Parmesan and toasted breadcrumbs.
