Instructions

First, make the peach syrup: Add 1 cup of frozen peaches, 1/4 cup of sweetener (honey), and 1/2 cup of water to a saucepan. Bring the mixture to a simmer and let it simmer for about 10 minutes, stirring constantly. After simmering, cover the saucepan with a lid, turn off the heat, and let it cool completely. Once cool, strain the syrup to remove any solids. Store the peach syrup refrigerated in a mason jar.

To make the latte: Pour about 2 tablespoons of the prepared peach syrup (adjust to your desired sweetness) over ice in a glass. Add 1/2 to 3/4 cup of coconut milk. In a separate small bowl or cup, whisk together 1 teaspoon of matcha with 3 tablespoons of hot water until smooth. Pour the whisked matcha on top of the peach syrup and coconut milk. Mix all ingredients together and enjoy!
