Fluffy and delicious scones, almost like a mix between a scone and biscuit, topped with a bright lemon glaze. This recipe is perfect for enjoying during peach season, even if the peaches aren't directly in the scone dough.
First, grab a mixing bowl and whisk together 1 cup of flour, 2 tbsp of sugar, 1/2 tbsp of baking powder, 1/4 tsp of salt + cinnamon. Then, cube 5 tbsp of cold butter and add to the bowl. Mix in using your hands until you have a crumbly dough. Pour in 1/2 cup of milk and stir until a dough forms. Form the dough into a circular shape that’s about 1 inch thick. Cut into 6 scones. Transfer to a lined baking sheet and pop in the freezer for 10 minutes while your oven preheats to 400°F. Bake for 18-22 mins, or until they start to get a little golden brown. While they’re baking, mix together the lemon glaze—3 tbsp of powdered sugar, 1 tbsp of milk, and the juice of 1/2 a lemon. Let the scones cool and then top with the glaze.
