Instructions

Grab a mixing bowl and pour in 2 cups (16 oz container) of heavy whipping cream, 1/2 cup of peanut butter, and 1/2 cup of coconut sugar. Using a hand mixer, whisk until fluffy and stiff peaks form (about 1-2 mins). If you’re having troubles getting it to thicken up, place the bowl in the freezer for 10 mins and try whipping again! Next, grab chocolate sweet thins (or another chocolate cookie or graham cracker) and crush the entire bag to get about 2 cups worth of crushed chocolate cookie. Next, melt down about 1/2 cup of chocolate chips for layering. Then, it’s time to layer! Start with a layer of the whipped filling, and then cookie, and then melted chocolate. Repeat this layering sequence once more. For the final layer, do whipped filling, melted chocolate, and then cookie (this ensures the bottom of the cake is cookie). Place the cake in the freezer overnight. Once it’s frozen, take it out of the loaf pan and flip it over so the cookie layer is on the bottom. Top with more melted chocolate (using the remaining chocolate chips) and crushed peanuts. Enjoy 🍫 🥜
