In a large mixing bowl, whisk together 1/4 cup of hydrated, fed sourdough starter (fed first thing in the morning, placed somewhere warm, and used once bubbling), 1/2 cup of water, and 1 tbsp of honey. Then, mix in 2 cups of flour and 1 tsp of salt until a dough starts to form. Gently knead and pull & fold to form a ball. Cover your mixing bowl with saran wrap and let this sit overnight at room temp to ferment (8-12 hours). Transfer the dough to a floured surface, gently knead, and divide the dough into 8-10 2 tbsp pieces. Flatten the pieces of dough, place a tbsp of cold cream cheese in the center, and form a ball around it. Once done, boil them for 1 minute, and place on a lined baking sheet. Top them with everything seasoning, sesame seeds, or shredded cheddar and jalapeño. Bake on 425°F for 15 minutes, or until golden. Let them rest for 5 minutes before enjoying.
