This recipe offers a delicious way to use sourdough discard, creating flavorful scallion pancakes in about 30 minutes of active time, with no oven required. It's suggested to pair perfectly with a cherry cola.
In a small mixing bowl, mix together 1 cup of all-purpose flour, ¼ cup of sourdough discard, and ⅓ cup of hot water using chopsticks. Transfer to a clean, floured surface and knead until a smooth dough forms. Transfer the dough back to the bowl and cover, or wrap the dough in Saran Wrap. Let this rest for 15 minutes in the fridge. Divide the dough into 3-4 pieces and roll them out into flat circles using a rolling pin. Sprinkle with sliced green onion, ensuring only the green top part is used to avoid tearing the dough. Then, roll the pieces into a log and spiral them into a circle (refer to video for reference if available). Flatten again using a rolling pin. Heat a pan to medium heat with oil. Once the oil is simmering, place one of the flattened pieces of dough into the pan. Cook on each side for 2 minutes. Transfer to a wire rack and repeat with the remaining dough.
