A comforting Sweetgreen Harvest Bowl copycat recipe, perfect for craving satisfying fall flavors. Features roasted chicken, sweet potato, rice, apple, almonds, kale, and goat cheese.
First, start by roasting the chicken. Place 3 chicken breasts on a parchment paper lined baking sheet. Drizzle with olive oil and sprinkle with some salt! Bake on 425°F for 30 minutes. Then, dice up a large sweet potato. Add this to a parchment lined baking sheet and bake on 425°F for 25 minutes. Next, add 1/2 cup of rice (wild rice or regular white rice) and 1 cup of water to a saucepan. Bring to a simmer on high heat. Once simmering, turn to low and cover until water is completely gone (about 8-10 minutes). While these are cooking, dice up an apple, 1/4 cup of almonds, and 2 cups of kale. Once everything is ready, assemble your bowls to your liking! Also, add some crumbled goat cheese. And top with a drizzle of olive oil, balsamic glaze, and sprinkle of salt.
