A wholesome and delicious tomato pie recipe, perfect for using fresh tomatoes. It features a cheesy mixture of cheddar, mozzarella, mayo, and sour cream layered over seasoned tomato slices in a pie crust, baked until golden and crispy.
Preheat your oven to 350°F. Start with either a store-bought or homemade pie crust. Slice 2 tomatoes into 1/4 inch thick slices. Pat them dry and salt. Let them sit to dry out slightly while making the cheese mixture. In a small mixing bowl, mix together 1/4 cup of shredded sharp cheddar, 1/4 cup of shredded mozzarella, 1/4 cup of mayonnaise, 2 tablespoons of sour cream, 2 tablespoons of oil, and a pinch of salt and pepper. Layer the tomato slices on the pie crust. Then top with the cheese mixture. Sprinkle with a little bit more shredded cheese. Bake for 25-30 minutes and then broil for 3 minutes to get a nice crispy top. Top with parsley or basil, slice, and serve.
