TRUFFLE FRIES—my favorite snack EVER (yes I said snack) and these are my go to when I need to bring an app or dish somewhere…always a hit!! Plus, some tips on how to get perfectly crisp, oven baked fries😚🤌
1. Grab 3 russet potatoes. Rinse and slice them horizontally 4 times, then vertically 4 times to get thin fries.
2. Add sliced potatoes to a mixing bowl filled with cold water. Let them soak for 15-30 minutes to remove excess starch and make them crispy.
3. Drain the potatoes and pat them thoroughly dry.
4. Add the dried potatoes back to the mixing bowl along with 3 tbsp of oil, 1 & 1/2 tsp of salt (flaky or course), and 1/2 tsp of truffle oil. Mix well to coat evenly.
5. Spread the coated potatoes evenly on a lined baking sheet.
6. Bake on 450°F (232°C) for 30-35 minutes, or until golden brown and crispy.
7. While fries are baking, make the truffle aioli: combine 3 tbsp of mayo, 1 tbsp of chopped parsley, 1 tbsp of grated Parmesan, a pinch of salt, juice of 1/2 a lemon, 1 clove of minced garlic, and 1 tsp of truffle oil in a small mixing bowl. Mix thoroughly.
8. Serve the truffle fries hot with the truffle aioli and enjoy!
